2024 Whiskeys:
Nose: Cinnamon, clove oil and white pepper in balance with russet apples and ripe pears, on a back-ground of charred oak.
Taste: Cinnamon, green peppers and a touch of nutmeg combined with orchard fruits, vanilla and toasted oak. All laid upon a crisp barley core.
Finish: Long Pot Still oils and spices slowly fade to rich barley, toasted wood and a wonderfully complex honey flavour.
Nose: An initial aroma of freshly cut hay is complemented by a crisp orchard fruit character - green apples and pears, with a twist of lime zest. Mild pot still spices appear, deepening from green tea to hazelnut and milk chocolate.
Palate: The initial sweet mouth coating typical of the Irish pot still inclusion is quickly complemented by the subtle touch of hops and cocoa beans from the beer cask finish.
Finish: Long and sweet with milk chocolate and butterscotch.
Nose: Aroma of toasted oak, toffee and malt.
Palate: Mellow hints of vanilla and butterscotch.
Finish: Lingers with hints of lush barley and honey.
Nose: Rich and fruity with notes of tropical fruits, coconut, nectarines in yoghurt, guava and a thick core of sweet cereals.
Palate: Thick and full on the palate, with an intense, unctuous creaminess, alongside dates, walnuts and peels. Good peach and coconut notes, and a little cinnamon.
Finish: Long finish, and very fruity with notes of cinnamon and nutmeg and hints of potpourri.
Nose: Light honeysuckle, astringent
Palate: Light texture, hints of spiced apples and pears
Finish: Quick finish, interchanging bitterness and sweetness
Nose: Exceptionally well-balanced aromas of zesty peel and juicy orange citrus fruits, with sweet whiskey undertones.
Taste: Delicate, smooth and full mouthfeel with distinctive notes of orange zest as well as spicy, nutty, sweet vanilla.
Finish: Clean finish with a sweet orange aftertaste.
Nose: Pot-still spicy with a certain sherry sweetness.
Palate: weet at first,fading into a luxurious mix of malt and vanilla.
Finish: Incredibly smooth.
Nose: Light sweet citrus and green apple combined with vanilla undertones.
Palate: Early fresh fruit leads to a definite light spice followed by some toasted wood which evolves into a delicious vanilla sweetness.
Finish: Medium length, buttery mellowness with a touch of Marzipan accompanying the lingering vanilla.
